  1. 3/4 cup (4 ounce) cubed smoked turkey ham

  2. 1/2 cup chopped onion

  3. 1/4 cup roasted red pepper from a jar; cut into small pieces ( save the rest for a later use)

  4. 3/4 cup shredded Swiss cheese ; divided

  5. 1 cup fresh baby spinach leaves

  6. 1 cup fat-free cottage cheese

  7. 1/2 cup evaporated fat-free milk

  8. 1/4 cup shredded reduced-fat cheddar cheese

  9. 2 large egg s

  10. 2 large egg whites

  11. 1/2 cup all-purpose flour

  12. 1 tsp. baking powder

  1. preheat oven to 350° 2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ham, onion, roasted red pepper and ground pepper to pan; sauté 4 minutes or until ham is lightly browned.

  2. Sprinkle ¼ cup shredded Swiss cheese in a 9-inch pie plate coated with cooking spray. Top with ham mixture.

  3. Combine remaining ½ cup Swiss with cottage cheese, milk, cheddar, eggs and egg whites in a large bowl; stir with whisk.

  4. Combine flour and baking soda in a small bowl. After it is mixed, add flour mixture to egg mixture. Stir until blended. Pour egg mixture over ham mixture. Bake at 350° for 45 minutes or until set in the middle.
