  1. For Carrot Bars: In a medium bowl combine eggs, sugar, oil, and baby food carrots. Stir in 1 teaspoon vanilla extract, flour, baking soda, cinnamon, and chopped nuts. Pour into a greased and floured 15-inch jelly roll pan. Bake for 15 to 20 minutes. Cool on rack. Frost. For Cream Cheese Frosting: In a small bowl beat butter, cream cheese, 1 teaspoon vanilla extract, and powdered sugar until of spreading consistency.
