  1. 1 Flank steak

  2. 1/4 cup 59ml Olive oil

  3. Creole seasoning - to taste

  4. Summer Salsa

  5. 1/2 Cantaloupe - diced

  6. 1 Jalapeño pepper - minced

  7. 1 cup 237ml Blackberries

  8. 1/2 cup 73g / 2.6oz Small-diced red bell pepper

  9. 1 cup 62g / 2 1/5oz Red onion - large diced (medium)

  10. 1/2 Lemon - juiced

  11. Chopped fresh parsley - to taste

  12. Chopped fresh cilantro - to taste

  13. Chopped green onions - to taste

  14. Salt - to taste

  15. Freshly-ground black pepper - to taste

  1. Season the flank steak with oil and Creole seasoning. Marinate for 4 hours, preferably overnight.

  2. In a large bowl, add the cantaloupe, jalapeño, blackberries, red pepper, lemon juice, parsley, cilantro and green onions. Mix well. Season with salt and pepper.

  3. Grill the flank steak to medium-rare, about 6 minutes per side. Slice the steak on a bias, against the grain.

  4. To serve, fan out a few slices on a plate. Top with summer salsa.
