  5. 5 c Cherries or Peaches

  7. 2 1/2 tb Lemon Juice

  8. 1/3 c Granulated Sugar

  9. 1/3 c Brown Sugar; packed

  10. 2 1/2 tb Cornstarch

  11. 1 ts Ground Cinnamon

  12. 1/4 ts Ground Nutmeg

  13. 1 tb Vanilla

  14. *If Using Cherries Add

  15. 1 ts Almond Extract

  16. --TOPPING--

  17. 1 c All-Purpose Flour

  18. 1 tb Granulated Sugar

  19. 1 ts Baking Powder

  20. 1/4 ts Salt

  21. 2 tb Butter or Margarine

  22. 1/3 c To

  23. 1/2 cup Milk

  24. Preheat oven to 450 degrees F.

  25. Drain cherries or peaches, reserving 1/4 cup juice. Discard the

  26. remaining juice. Combine fruit and lemon juice and set aside. In a

  27. saucepan, combine sugars, cornstarch, cinnamon and nutmeg; stir in

  28. reserved fruit juice. Bring to a boil, stirring frequently about 2

  29. minutes. Remove from heat and add fruit and vanilla. If using

  30. cherries, stir in almond extract instead of the vanilla. Pour into an

  31. ungreased 8 inch square baking pan.

  32. For topping, combine flour, sugar, baking powder and salt; cut in

  33. butter until crumbly. Stir in enough milk to moisten. Drop by

  34. 450 for 10 to 13 minutes

  35. or until golden brown.

  36. We like doubling the dough recipe. If you do, bake at 400 degrees F.

  37. 20 to 25 minutes
