  1. Remove crusts from bread and cut into 1/2-inch cubes and set aside. Place tomatoes, peppers, garlic, onion and cucumber in a food processor and process until smooth. Add bread, olive oil, and vinegar and process until smooth again. Add water and season with salt and pepper. Chill well and serve with 1/4-inch dice of each vegetable included.
