  1. 1 pounds Broccoli; chopped

  2. 1/4 pounds Green beans; chopped

  3. 2 Carrots; chopped

  4. 1 Onion; finely chopped

  5. 2 Cloves garlic; minced

  6. 2 cups Fresh bread crumbs

  7. 1/4 cup Unbleached all-purpose flour

  8. 2 tablespoons Soy milk

  9. 1 teaspoon Dried basil

  10. Salt and pepper; to taste

  11. 1 tablespoon Vegetable oil; up to

  12. 2T as needed

  1. Makes 8 patties. Steam the broccoli, beans, and carrots until tender. Process the steamed vegetables in a food processor with the onion and garlic. Puree. Mix in the bread crumbs and flour. Stir in the soymilk and basil, and season with salt and pepper. Refrigerate the mixture for at least one hour. Form the mixture into patties. Heat the oil in a large frying pan and saute the patties on each side until they are browned. Drain them on paper towels. Serve with salsa or ketchup.
