  1. 2 c Ricotta cheese

  2. 4 oz Semi-sweet chocolate

  3. 1 oz Orange liqueur

  4. 1 1/2 c Raspberry jam

  5. 2 c Chocolate frosting or whipped cream

  1. 9x5" pound cake Toasted whole almonds (optional) Chill pound cake for 1 hour.

  2. Trim edges and uneven pieces so cake is level on all sides and top.

  3. Slice cake horizontally into 1/2" slices and place on serving platter.

  4. Force cheese through a sieve into a bowl and beat until smooth.

  5. Chop chocolate into fine bits in a blender.

  6. Mix chocolate bits with liqueur and jam.

  7. Spread a portion of cheese on the bottom layer; then spread that with a portion of jam mixture.

  8. Repeat until all layers are used, leaving top plain.

  9. Press down gently.

  10. Use a spatula to even all sides.

  11. Cover with plastic wrap and refrigerate 24 hours.

  12. Before serving, frost with chocolate frosting or whipped cream and garnish with almonds.
