  5. 4 Ripe tomatoes, peeled,

  6. 2 De-seeded and chopped

  7. Finely 2 Garlic cloves, chopped

  8. Finely 2 oz (60 g) rocket leaves,

  9. Chopped coarsely 1 tb Olive oil

  10. 8 oz (240 g) penne pasta

  12. Salt and freshly ground

  13. Black pepper

  14. 1. Place the tomatoes, garlic and rocket leaves in a

  15. bowl. Add the olive oil and season well with the salt

  16. and pepper. Cover and refrigerate for at least 2

  17. hours. 2. Cook the pasta in plenty of lightly salted

  18. boiling water for 8 -1 0 minutes until al dente. Rinse

  19. well with cold water and drain thoroughly. Toss the

  20. pasta with the chilled tomato mixture and serve.

  21. Cook's notes: Serve this salad warm - simply toss the

  22. hot, drained pasta into the chilled tomato sauce. If

  23. they are available, plum tomatoes taste delicious in

  24. this recipe.

  28. Freezing not recommended You don't have to travel to

  29. Italy to enjoy wild rughetta, a spiky green-leaved

  30. plant with a strong peppery flavour. Most supermarkets

  31. now sell rocket, a slightly milder cultivated variety.

  32. If you can't find it, use spinach or a mixture of

  33. lamb's lettuce and watercress. Variation:

  34. Sprinkle each serving with 1/2 oz (15 g) grated

  35. parmesan cheese. --
