  1. 1 c. butter softened

  2. 1/2 c. confectioners' sugar

  3. 1 tsp. lemon extract

  4. 2 c. flour

  5. 1/4 tsp. salt

  6. 1 (16 oz.) can prepared lemon frosting

  1. Cream butter nad 1/2 cup confectioners' sugar. Add lemon extract. Sift together flour and salt. Add to creamed mixture. Mix well. Roll level teaspoonfuls into balls. Place 1" apart on ungreased cookie sheet. Flatten somewhat.

  2. Bake in 350° oven for 8 to 10 minutes.

  3. Spread half of cooled cookies with frosting and top with another cookie. Roll in confectioners' sugar. Makes 2½ to 3 dozen. Yield: serves 30
