  1. 2 pounds zucchini, sliced

  2. 1/2 cup water

  3. 1 pound lean ground beef

  4. 1 cup chopped onion

  5. 1 teaspoon salt

  6. 1/2 teaspoon ground black pepper

  7. 1/4 teaspoon garlic powder

  8. 3 cups cooked rice

  9. 1 (4-ounce) can diced green chilies, drained

  10. 2 large eggs

  11. 1 (12-ounce) container cottage cheese

  12. 1 tablespoon freshly grated Parmesan cheese

  13. 2 cups shredded cheddar cheese

  1. Preheat oven to 350 °F (175°C). Lightly grease a 2-quart casserole dish; set aside. In a saucepan steam zucchini in water until tender-crisp. In a skillet combine ground beef with onion; sprinkle with salt, pepper and garlic powder. Brown beef thoroughly, about 5 minutes, stirring often; drain. Add rice, green chiles, zucchini, eggs, cottage cheese and Parmesan cheese. Mix well. Transfer to casserole dish, top with cheddar cheese and bake until bubbly and starting to brown, about 30 minutes.
