  1. 1 1/2 cups carrots, cut into strips

  2. 1 cup capsicum, cut into strips

  3. 4 tbsp mustard oil

  4. To be combined into a masala mixture

  5. 1/2 tbsp nigella seeds (kalonji)

  6. 2 tbsp split mustard seeds (rai na kuria)

  7. 1/4 tsp asafoetida (hing)

  8. 1 tbsp chilli powder

  9. 1/2 tsp fenugreek seeds (methi) powder

  10. 1 tbsp salt

  1. Combine the masala mixture,carrots and capsicum ina bowl and mix well.

  2. In another bowl, microwave the mustard oil on HIGH for 2 minutes till it is hot.

  3. Pour the hot oil over the carrot and capsicum and mix again.

  4. Cover and microwave on HIGH for 30 seconds.

  5. Cool and store refrigerated for upto 3 days.
