  2. 9 inch pie

  3. 4 strips of bacon

  4. 1 onion (thinly sliced)

  5. 1 C swiss cheese

  6. 1/2 C Parmesan or Romano Cheese

  7. 4 egg s (lightly beaten)

  8. 2 C light cream

  9. 1/4 tsp nutmeg

  10. 1/2 tsp salt

  11. 1/4 tsp pepper

  12. 1 C sliced mushroom s

  1. Preheat oven to 450 degrees Line 9 inch pie plate with pastry and bake for 5 minutes. Cook bacon until crisp. Remove all but 1 tsp of fat remaining in skillet. Cook onion (and mushroom)in remaining bacon fat until the onion is transparent. Crumble the bacon and sprinkle bacon, onions, mushrooms and cheeses on bottom of partly baked pastry. Combine eggs, cream, nutmeg, salt and pepper and strain over the cheese stuff. Bake 15 minutes, then reduce oven to 350 degrees. Bake 10 minutes more until knife comes out clean about 1 inch from edge
