  7. 2 Tbsp Vegetable Oil

  8. 1 Lg Yellow Onion -- diced

  9. 2 Tbsp Fresh Ginger Root -- minced

  10. 2 Tbsp Minced Garlic

  11. 1 C Rum Of Your Choice

  12. 1/2 C Red Wine Vinegar

  13. 1 C Catsup

  14. 1/2 C Molasses

  15. 1/4 C Brown Sugar -- lightly packed

  16. 1 tbsp Ground Allspice

  17. 1 Pn Ground Mace

  18. Salt -- to taste

  19. Cracked Black Pepper -- to taste

  20. In a small saucepan over medium heat, heat oil until hot, but not

  21. smoking. Add onions and saute, stirring occasionally, until

  22. 5 to 7 minutes. Add ginger and garllic and saute, stirring

  23. for 1 minute. Add the rum, vinegar, ketchup, molasses, sugar, allspice

  24. and mace and bring just to a boil. Reduce the heat to low and simmer

  25. gently for 20 minutes. Remove from heat and season to taste.

  26. Makes about 1 quart of sauce.
