  1. This is a Paula Deen recipe. First of all, preheat the oven at 350ºF. Take three 9'' cake pans and grease them with cooking spray. In an electric mixer, you will mix 1 cup softened butter and 2 cups sugar. Once the mixture is soft and incorporated properly, add the eggs one at a time. Again combine properly, then add the flour, and baking soda next. To add the dry ingredients, you will do so alternatively along with buttermilk. So, first goes little bit of flour, then buttermilk, then baking soda, then flour, and then buttermilk. In the end, you will add vanilla, coconut flakes, and chopped nuts in the mixer.

  2. After the batter is ready, you will pour it in the pans and into the oven for half an hour. Once the cake is baked, you will leave them aside to cool for 5 minutes or so. Till that is happening, we will make the frosting. In a bowl, mix cream cheese and the rest of the ¼ cup butter. In the end, you will add confectioner's sugar and almond extract. Mix well and set it aside. Take the cakes out of the pan and once they are completely cool, take the frosting to layer them properly.

Recipe #2 Ingredients 8 oz cream cheese 5 eggs 2 cups flour 2 sticks butter 1 cup shortening 1 cup sugar 1 cup pecans, chopped 1 cup buttermilk 1 cup coconut, shredded 1 teaspoon baking soda 1 teaspoon vanilla 1 lb. powdered sugar Pinch of salt This is an adaptation of an authentic recipe. Preheat the oven at 350ºF. In an electric mixer, combine shortening and sugar first. Mix properly, then add eggs one at a time, baking soda, and then salt. Mix the dry ingredients together and pour it slowly in with the wet ingredients. In the end, you will add a teaspoon vanilla. When everything is mixed properly, fold in 1 cup pecans and shredded coconut. Take three 8'' pans and grease them with cooking spray. Pour the batter equally in all 3 pans and into the oven for 20-25 minutes. Once the cake is ready, take the pans out and let them cool down.

  4. To make the frosting, in a clean electric mixer, combine butter, cream cheese, and 1 teaspoon vanilla. Slowly, you will add powdered sugar in and mix properly. In the end, fold the 1 cup chopped pecans. Once the cake is cool enough, use the frosting to layer them properly. Instead of the pecans, you can use other nuts as well like walnuts, almonds, etc.
