  5. 1 md spaghetti squash

  6. 6 mushrooms -- sliced

  7. 1/2 red bell pepper --

  8. 1/2 green bell pepper --

  9. : julienned

  10. 4 oz sliced black olives --

  11. : drained

  12. 2 avocados -- seed,peel

  13. : slice

  14. : Avocado Oil Vinaigrette--

  15. 3/4 c avocado oil -- or light

  16. : vegetable o

  17. 1/4 c white wine vinegar

  18. 3 cloves garlic -- crushed

  19. 1 ts oregano

  20. 1 ts basil

  21. 1 ts rosemary

  22. 1 ts dry mustard

  23. 1 ts Worcestershire sauce

  24. : Salt and pepper to taste

  25. Prepare Avocado Oil Vinaigrette at least 24 hours

  26. before serving time. Shake all ingredients together in

  27. tightly covered container. Let Vinaigrette stand at

  28. least 24 hours. Halve squash lengthwise, scoop out

  29. seeds. Place halves cut side down in large saucepan;

  30. add water to a depth of two inches; cover and bring to

  31. a boil. Reduce heat; simmer squash 20 minutes. Drain

  32. off water; cool squash and shred into strands. Mix

  33. squash, mushrooms, peppers, olives and avocados in

  34. serving bowl. Pour Vinaigrette over, toss gently and serve. Recipe By : --
