  6. 1 3/4 pounds ham hocks or bone -- up to

  7. 1 large onion -- minced

  8. 1 cup diced carrot

  9. 1 cup diced celery

  10. 1 bay leaf

  11. 1 tablespoon lemon juice

  12. 2 teaspoons salt

  13. 1/8 teaspoon pepper

  1. Rinse and sort peas. In large soup kettle combine peas, water, and ham; simmer, covered 2 - 2 1/2 hours. Add remaining ingredients; simmer, covered 45 minutes. Remove bones. For thicker soup simmer 20-30 minutes more uncovered.
