  1. 4 tablespoons butter

  2. 2 c. onion s

  3. 4 large leek s

  4. 4-6 cloves garlic

  5. 4 c. chicken stock

  6. 1 teaspoon thyme

  7. 1-2 bay leaves

  8. salt and pepper

  9. 1 c. heavy cream

  10. 3 scallion s

  1. Melt butter in a medium saucepan

  2. Sauté minced garlic, chopped onions and leeks until soft or translucent (15- 25 minutes)

  3. Add stock and seasonings, bringing to a boil

  4. Reduce heat and continue to cook for another 20 minutes

  5. Strain the liquid and puree onion mixture in a food processor or blender

  6. Return liquid and puree to the saucepan and over medium heat whisk in cream

  7. Add scallions and simmer for 5-10 minutes
