  1. For the dressing :

  2. 1/4 cup extra-virgin olive oil

  3. 2 Tbsp pure maple syrup

  4. 2 Tbsp orange juice

  5. 2 Tbsp sherry wine or balsamic vinegar

  6. 1 Tbsp fresh lemon juice

  7. 2 tsp peeled and minced fresh ginger

  8. 1/2 tsp ground cinnamon

  9. 1/4 tsp ground nutmeg

  10. For the salad:

  11. 6 lbs. peeled red-skin sweet potato es (yams), cut in

  12. 3/4 in. cubes

  13. 1 cup chopped green onion s

  14. 1 cup chopped fresh parsley

  15. 1 cup toasted pecan s, coarsely chopped

  16. 1/2 cup each golden raisin s and brown raisins

  1. For the dressing, whisk all ingredients to blend in small bowl. Set aside.

  2. Steam sweet potatoes until just tender, about 10 minutes and transfer to large bowl. Cool to room temperature.

  3. Add green onions, parsley, pecans, and all raisins. Pour dressing over and toss gently to blend. Season salad with salt and pepper to taste.
