  5. 1 qt Green Tomatoes, Chopped

  6. 2 ea Med. Red Peppers

  7. 2 ea Med. Green Peppers

  8. 2 ea Lge. Onions,Peeled & Chopped

  9. 1 ea Small Head Cabbage ** OR 2 c Cucumber, Chopped

  10. 1/2 c Salt

  11. 3 c Cider Vinegar

  12. 2 c Brown Sugar

  13. 1 ea 3-inch Stick Cinnamon

  14. 1 ts Whole Cloves

  15. 1 ts Whole allspice

  16. 1 ts Mustard Seeds

  17. Peppers should be seeded and chopped.

  18. ** Cabbage should be shredded.

  19. -- Combine all the vegetables and the

  20. slat and let stand overnight. In the morning, drain

  21. the vegetables pressing out the juice. Add the

  22. vinegar, sugar and the spices, tied in a bag; bring to

  23. a boil and simmer until the vegetables are clear and the syrup is thickened. Discard the spice bag and seall the picalilli in hot jars. Makes 8 Pints.
