  1. Serves 4 1 lb. boneless, skinless Chicken Breasts, cut into cubes

  2. 1 Tbs. Olive Oil

  3. 15-oz. can Corn, drained

  4. 15-oz. can Tomato Sauce

  5. 4 oz. can Chopped Green Chilies

  6. 4 oz. jar Pimientos, drained

  7. 2 tsp. Chili Powder

  8. 1 tsp. Onion Powder

  9. Cooked Rice for four

  10. 1/2 to 1 cup Cheddar Cheese, shredded

  11. 8 to 12 minutes.

  12. Add the corn, tomato sauce, green chilies, pimiento, chili powder, and onion powder to the skillet. Bring the mixture to a boil, stirring occasionally. Reduce the heat, cover, and simmer for about 15 minutes.

  13. Meanwhile, prepare the rice as directed on the manufacturer's packaging.

  14. To serve, ladle a hearty portion of the chicken fiesta over a bed of rice. Top with a sprinkling of cheddar cheese and serve warm.
