  1. 6 Cloves of garlic, minced

  2. Ground coriander

  3. Brown sugar, packed

  4. 1 tb Black pepper

  5. 2 ts

  6. Salt 1/2

  8. Soy sauce

  9. 4 ts

  10. Finely chopped ginger root

  11. 2 tb Lime juice

  12. 6 tb Peanut oil

  1. Rub: Combine rub ingredients and rub into chicken pieces.

  2. Allow to stand for 45 minutes.

  3. Combine marinade ingredients and add chicken pieces.

  4. Do this in a non aluminum pan.

  5. Store in the refigerator at least 6 hours, or overnight.

  6. Grill, being careful not to overcook.

  7. Serve with peanut sauce.

  8. I do this sometimes using boneless breast, which I cut either into chunks or strips (threaded on skewers), and sometimes just using chicken pieces.
