  1. 4 cups cherry tomatoes,chopped into quarters

  2. 1 cup firmly packed,dark brown sugar

  3. 4 Tbsp tart raspberry preserves(or tart currant jam)

  4. 4 tsp seeded jalapeno, finely diced

  5. 4 tsp balsamic vinegar

  6. 8 whole cloves

  7. 1/2 tsp ground cinnamon

  8. 1 Tbsp lime juice

  9. 1-2 tsp freshly grated ginger

  10. 1 tsp soy

  1. Combine all ingredients in a saucepan. Simmer over medium-low heat for about 1-2 hours. Stir occasionally in the beginning, and more often when jam begins to really thicken. Jam is done when reduced to about 1 1/2 pints. You may store bottled jam in the fridge or process 15 min. in a boiling water bath.
