  1. 5 eggs

  2. 4 egg whites

  3. 1/3 cup(s) (grated) Parmesan cheese

  4. 1/2 teaspoon(s) salt

  5. 1/4 teaspoon(s) freshly ground black pepper

  6. 1 tablespoon(s) olive oil

  7. 2 cup(s) (1/2 pound) cooked asparagus , cut into 1-inch pieces 5 cup(s) (chopped) baked ham

  8. 1/2 cup(s) (2 ounces) shredded Manchego or Cheddar cheese

  1. Make Egg Mixture: In large bowl, whisk together whole eggs, egg whites, Parmesan, salt, and pepper.

  2. In 10-inch broiler-proof skillet, heat oil over medium heat. Add egg mixture. Sprinkle on the asparagus and ham. Reduce heat to low and cook without stirring, about 15 minutes or until sides are set and center is still slightly wet.

  3. Meanwhile preheat broiler.

  4. Sprinkle Manchego cheese evenly over top of frittata. Broil in pan 6 inches from heat 2 minutes or until frittata is set and top is golden brown. Slice into wedges and serve hot from pan or let cool and serve at room temperature.
