  1. 2 large egg whites

  2. 1/2 cup superfine (baker's) sugar

  3. 1 lb strawberries, hulled and sliced

  4. 1 cup fat-free Greek yogurt (plain or vanilla)

  5. 1 tbsp granulated sugar if using plain yogurt

  1. Preparation: Preheat oven to 200 degrees. Line a large rimmed baking tray with parchment paper or a silicone mat. Place egg whites in large bowl and whisk with an electric mixer until soft-peak stage. Add sugar one or two tablespoons at a time, mixing until sugar is dissolved before each addition. Whisk eggs and sugar until stiff and glossy. Spoon meringue into eight small mounds on to parchment-lined baking tray. Bake for about an hour and a half. Turn off heat and leave in oven for three or four hours (or overnight) to dry out. Fold sliced strawberries into yogurt (and sugar if using). When meringue is cooled and dry, break into pieces and stir into strawberries and yogurt mixture. Spoon into 6 dessert glasses.
