  1. 25g/1oz soy margarine

  2. 1 medium onion, roughly chopped

  3. 1 celery stick, roughly chopped

  4. 1 tomato, roughly chopped

  5. 450g/1lb carrots, peeled and chopped

  6. 3 cups/

  7. 900ml water

  8. salt and black pepper

  9. 1/2 cup/

  10. 100ml pouring soy cream

  11. basil leaves for garnish

  12. Serves 4

  1. Method :

  2. Melt the margarine in a pan, then add the onion, celery, tomato and carrots and fry for 3 minutes.

  3. Add the water and bring to the boil. Simmer for 30 minutes. Season with the salt and pepper.

  4. Allowthe soup to cool slightly, then puree until smooth in a blender or food processor.

  5. Return the soup to the pan, add the cream and reheat. Garnish with the basil leaves.
