  1. 1 lb chicken tenders Salt and pepper Olive oil

  2. 1 bag frozen artichokes

  3. 1 head romaine lettuce

  4. 1 bell pepper (any color)

  5. 2 tomatoes

  6. 1 cucumber Balsamic vinegar

  1. Sprinkle chicken tenders with a little salt and pepper. Heat grill and brush with a little olive oil to prevent sticking. Grill chicken tenders just until done. Meanwhile, saute artichokes in a pan with a little olive oil, salt and pepper until done. Wash lettuce, bell pepper, tomatoes & cucumber. Chop lettuce; slice pepper, tomatoes & cucumber. Toss together in a salad bowl. When chicken and artichokes are ready, add them to the salad mixture. Add olive oil, balsamic vinegar, salt and pepper to taste. Toss to serve.
