  1. 1/2 cup 118ml Olive oil

  2. 4 cups 948ml Garlic - thinly sliced

  3. 1 Red bell pepper - seeded, chopped

  4. 1 1/4 lbs 567g / 20oz Shrimp - med

  5. 3 tablespoons 45ml Lemon juice

  6. 3 tablespoons 45ml Dry sherry

  7. 1/4 teaspoon 1 1/3ml Red pepper flakes

  8. 3 tablespoons 45ml Parsley - finely chopped

  1. Recipe Instructions Heat the oil in a large skillet over medium-high heat. Add the garlic, pepper and shrimp. Cook for about 2 minutes, stirring constantly, just until the shrimp turn pink. Increase the heat to high. Add the lemon juice, sherry, hot red pepper, and salt to taste and bring to a boil. Serve immediately, sprinkled with parsley. The total cooking time shouldn't be more than 5 minutes. Serve over rice with a salad for a delicious, quick meal.
