  1. 3 tbsp olive oil

  2. 2 onions , finely chopped

  3. 1 stick celery

  4. 8-10 tomatoes , peeled and chopped

  5. 2 clove garlic , finely chopped

  6. 2 tbsp tomato puree

  7. 1 tsp molasses sugar

  8. 3 tbsp red wine black pepper

  1. Method 1. Heat the oil in a frying pan over medium heat. Add the onion and celery, and gently fry for about 7 minutes until soft.

  2. Stir in the remaining ingredients and season to taste. Bring to the boil, then lower the heat and simmer for 25-30 minutes until reduced and thickened.
