  2. 1/2 pound lentils

  3. 3 quarts cold water

  4. Small piece of bay-leaf

  5. 1 teaspoon salt

  6. 1 onion

  1. Wash the lentils; soak them in one quart of water overnight.

  2. Tie them in muslin and put them into a saucepan with the water in which they were soaked plus two quarts. Add the salt.

  3. Bring to boiling point; skim.

  4. Add the onion and bay-leaf; boil for two hours.

  5. Take out the lentils and strain.
