  1. 6 ounces light cream cheese, softened

  2. 2 tablespoons frozen orange juice concentrate, thawed

  3. 1 tablespoon honey

  4. 1/3 cup chopped toasted walnuts Sandwiches:

  5. 1 (10 3/4 to 12-ounces) prepackaged pound cake, thawed if frozen

  6. 2 pints strawberries, stemmed Whipped cream:

  7. 1/2 cup whipping cream

  8. 1 tablespoon sugar

  9. 1/4 teaspoon vanilla Mint springs, optional

  1. Prepare spread: In a small bowl, beat cream cheese, orange juice concentrate and honey until well blended; stir in walnuts.

  2. Assemble sandwiches: Slice 1 pint of strawberries. Cut cake into 12 equal slices. Spread cream cheese mixture lightly one side of each cake slice. Divide sliced strawberries among 4 slices of cake, spread side up. Top with another 4 slices of cake, spread side up. Divide remaining sliced strawberries among the four sandwiches. Top with another 4 slices of cake, spread side down. Press the sandwiches gently together and cut diagonally into halves; skewer each with a sandwich pick.

  3. Prepare whipped cream: In a chilled bowl, beat cream until frothy; slowly beat in sugar and vanilla and continue beating until soft, glossy peaks form.

  4. Halve remaining 1 pint of strawberries. Serve sandwiches with strawberries. Spoon a generous dollop of whipped cream on top of each sandwich. Garnish with mint sprigs, if desired. Serve immediately.
