  1. Instructions Beat the eggs just enough to mix the white and yolk. Add a scant 1/2 cup milk, salt, and pepper. Melt 1 tablespoon butter in a pan. Add the egg mixture and stir until it begins to set. Then, stir very briskly, mixing and chopping rapidly with a large spoon. Cook until the yolk is rather dry, continually mixing and chopping. The white will be in distinct bits and the yolk of the consistency of a hard-boiled egg. Pour the egg into a hot dish. Dot the top with bits of soft butter and sprinkle the parsley on top. Serve immediately.
