  1. 1 Marinated artichoke hearts - (12 oz) - drained, liquid reserved

  2. 4 Green onions - finely chopped

  3. 2 Garlic cloves - finely chopped

  4. 4 Eggs - beaten

  5. 2 tablespoons 30ml Atkins Bake Mix

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  8. 8 oz 227g Monterey jack or pepper jack cheese - shredded

  9. 2 tablespoons 30ml Chopped fresh parsley

  1. Recipe Instructions Heat oven to 325 degrees. Chop artichokes and set aside. In a medium skillet, heat reserved marinade liquid 2 minutes over low heat. Add green onion and garlic; saute 5 minutes, until softened. In a mixing bowl, combine eggs, bake mix, salt and pepper. Thoroughly mix in cheese, parsley, artichokes and onion mixture. Transfer to an 8- or 9-inch square baking dish. Bake 30 minutes, until set. Cool slightly before cutting into squares.
