  1. Boysenberry or Double Blackberry Pie

  2. 6 cups boysenberries or blackberries

  3. 1 cup sugar

  4. 3 to 4 tablespoons quick-cooking tapioca

  5. 1/2 teaspoon ground cinnamon

  6. 1/4 teaspoon ground nutmeg

  7. 1 tablespoon lemon juice

  8. 3 tablespoons blackberry-flavor liqueur (cordial or brandy), optional

  9. Pastry for a double-crust 9-inch pie

  10. Rinse berries and drain dry on absorbent towels. In a large bowl

  11. stir together sugar, tapioca, cinnamon, and nutmeg. Add berries,

  12. lemon juice, and liqueur; mix gently. Let stand at least 15 minutes

  13. or up to 1 hour to soften tapioca, stirring gently now and then,

  14. before pouring into pie crust.

  15. Bake over foil in a 400 degree F oven on the lowest rack until

  16. 55 to 60 minutes.

  17. Note: If berries are firm-ripe, use minimum tapioca; if soft-ripe,

  18. use the maximum.
