  1. 1/2 cup all-bran -- or 1/2 cup bran buds -- cereal

  2. 1 cup coffee -- cold, strong

  3. 1 1/2 cups white flour

  4. 1 teaspoon baking soda

  5. 1/2 teaspoon salt

  6. 1 teaspoon cinnamon

  7. 3/4 cup sugar

  8. 1/4 cup oil

  9. 1 tablespoon vinegar

  10. 1/2 teaspoon almond extract

  11. 1/2 cup coconut -- flaked, divided

  1. Preparation : Preheat the oven to 350 degrees. Combine the bran cereal and coffee in a large mixing bowl. Set aside. Stir the flour, baking soda, salt, cinnamon and sugar together in a small bowl. Set aside. Stir the oil, vinegar, almond extract and all but 2 tablespoons (per cake) of the coconut into the bran mixture. Add the flour mixture. Stir to combine thoroughly. Pour the batter into a greased 8-inch square baking pan(s). Sprinkle the reserved coconut on top. Bake for about 25 minutes or until a tester inserted in the center comes out clean. Serve warm or at room temperature.
