  1. 2 c Chopped red onion

  2. 1/2 c Minced fresh cilantro (pack)

  3. 2 c Minced fresh ripe tomatoes

  4. 1/2 ts Salt

  5. 1 c Minced parsley (packed)

  6. Black pepper to taste Combine all ingredients and mix well. For a finer consistency, give the mixture a brief whirl or two in a food processor or blender.
