  1. 8 Belgian endive

  2. 2 tablespoons 30ml Butter - plus

  3. 1/4 cup 49g / 1.7oz Butter - (1/2 stick)

  4. 1 tablespoon 15ml Flour

  5. 1 teaspoon 5ml Salt

  6. 1/2 teaspoon 2 1/2ml Sugar

  7. Grating of nutmeg - or to taste

  8. 1/2 cup 118ml Whipping cream

  1. Trim any green or wilted outer leaves from endive heads. Trim bottoms and cut an 'X' through base. Cook in plenty of rapidly boiling water until tender, 15 to 20 minutes.

  2. Drain, rinse with cold water and pat dry. Press out any remaining moisture, then chop finely.

  3. Melt 2 tablespoons butter in medium skillet and cook endive over medium-high heat until very tender, 10 minutes. Add flour and stir to mix well. Season with salt, sugar and nutmeg to taste, then add whipping cream. Cook over medium-low heat until lightly thickened, about 5 minutes. Add 1/4 cup (1/2 stick) butter and stir to mix well.

  4. This recipe yields 8 to 10 servings.
