  1. 2 cups 125g / 4.4oz Fresh corn kernels

  2. 2 tablespoons 30ml Minced red onion

  3. 3 tablespoons 45ml Butter - cold, cut into 2 tablespoons 30ml Chopped cilantro - pieces

  4. 1/4 cup 15g / 1/2oz Seeded and diced tomatoes

  5. 1/8 teaspoon 0.6ml Freshly ground black pepper

  6. 1 teaspoon 5ml Jalapeno pepper - seeded and (small)

  7. 1/4 teaspoon 1 1/3ml Coarse salt - minced

  1. Cut raw kernels off cobs with a sharp knife. Combine all ingredients in a saucepan over high heat and stir while bringing salsa to a boil.

  2. When butter has melted completely and takes on the look of a light butter sauce, remove from heat and serve immediately. Use with chicken or lobster.

  3. Makes 3 cups.
