  2. SIKOTAKIA MARINATA (MARINATED LIVER)

  8. 2 1/4 pounds Calf or lamb's liver

  9. Oil or butter for frying

  10. 1/2 cup Finest quality oil

  11. 2 tablespoons Flour

  12. Flour for dipping

  13. 1/3 cup Vinegar

  14. 1/2 tablespoon Tomato paste

  15. 1 c. water

  16. 1/2 teaspoon Rosemary (opt.)

  17. 1 Bay leaf

  18. Salt & pepper to taste

  19. 1 cup Water (or more as needed)

  20. Slice liver, dip slices into flour, fry in hot oil or butter, and place on a

  21. platter. Add the 1/2 c. oil to the oil in which you fried the liver, and when

  22. it is hot, slowly add the 2 tbs. flour, stirring constantly with a wooden spoon

  23. until well blended.

  24. When the mixture is lightly browned, add the vinegar, tomato paste and water.

  25. 5 to 10 min.

  26. 2 to 3 min.

  28. NOTE: Liver prepared in this fashion will keep for several days, especially
