  1. 4 small zucchini , sliced into 1/4 in rounds

  2. 2 TBL olive oil

  3. 1 tsp dried red chili flakes

  4. 1/4 tsp black pepper

  5. 2 TBL kosher salt

  6. 2 cloves garlic , crushed

  7. 1 lb fresh cheese ravioli

  8. 3 TBL chopped fresh flat-leaf parsley

  1. Preheat oven to 400. Bring lg pot of water to boil Place Zucchini in large baking dish in single layer and drizzle with oil, chili flakes and 3 TBL of parm;then season with pepper and ½ tsp of salt Add garlic and roast for 20 minutes, tossing halfway thru until tender and just golden brown Cook ravioli Drain and place in large bowl Toss gently with zucchini, half the parsley, half remaining Parm Serve with the remaining parsley and Parm
