  1. 1 (4-lb.) watermelon

  2. 2 tb Mint flakes

  1. The beauty of this dessert is its simplicity.

  2. With a large spoon, scoop out the red portions of melon from the watermelon Slice into bite-size pieces and remove all seeds.

  3. Take 1 cup of juice remaining in melon and strain.

  4. In a large mixing bowl, add melon pieces, juice and mint flakes.

  5. Mix thoroughly.

  6. Cover and chill for at least 20 minutes and serve.

  7. Makes 6 servings, yields 4 to 5 cups.
