  1. Irish Colcannon

  2. 1lb cabbage cored, quartered and shredded

  3. 2lbs potatoes, peeled and cut into 2" peices

  4. 2 small leeks (white and pale green parts only) washed and sliced

  5. 1C milk

  6. 1/2 t ground mace

  7. 2T butter

  8. salt and pepper

  9. In separate pans, cook cabbage and potatoes in boiling salted water

  10. until tender, 12-15 min. Drain cabbage and chop, drain potatoes

  11. and mash.

  12. Meanwhile, combine leeks and milk and cook over med, heat until

  13. tender, 8-10 min.

  14. Add potatoes, salt, pepper and mace to leeks and milk and stir over

  15. low heat until blended. Add cabbage and 8T butter and stir again

  16. to the consistency of mashed potatoes. Dot with remaining buter.

  17. Serve at once!
