  1. Filling

  3. 1 lb farmer cheese through ricer or fine strainer

  6. 1 tbsp sugar

  7. 1 tbsp soft butter

  8. Pinch salt Batter

  9. Beat until light and fluffy

  10. 2 eggs

  11. Add

  12. 1/2 tsp salt

  13. 1 tsp sugar

  14. 1 cup water

  15. 1 tbsp melted butter

  16. 1 cup flour, sifted with

  17. 1/4 tsp baking powder

  1. Beat until smooth. Drop this batter, 2 tablespoons at a time onto greased (5-inch) frying pan on medium heat. Tip pan so batter spreads thinly over entire pan. Pour off excess. Bake one side until top is fry and starts to blister. Turn out onto board. Fill with 1 tablespoon of filling. Roll and fold in sides. Refridgerate or freeze. When ready to serve, brush tops with melted butter. Bake at 400° F for ½ hour. Serve with sour cream or with cinnamon sugar mix.
