  1. 6 hard-boiled eggs -- halved

  2. 2 tablespoons mayonnaise

  3. 1/2 teaspoon dry mustard powder

  4. 1 tablespoon dijon mustard

  5. 3 tablespoons finely chopped sour-sweet gherkins

  6. 2 teaspoons finely chopped spring onion salt freshly ground black pepper capers -- for garnish paprika -- for garnish

  1. Preparation : Remove the yolks from the halved eggs, reserving the whites, and place them in a small bowl. Mash them thoroughly, then blend the mayonnaise, the two mustards, the chopped gherkins, spring onion and seasoning to taste. Spoon the mixture into the egg-white halves and garnish decoratively with the capers and paprika.
