  1. 3/4 cup tomatoes -- diced

  2. 1/2 cup red pepper -- diced

  3. 1/2 cup scallions -- chopped

  4. 2 tablespoons fresh coriander

  5. 1 lime

  6. 1/4 teaspoon ground cumin

  7. 1/4 teaspoon chili powder

  8. 1/4 teaspoon salt

  9. 3/4 cup black beans

  10. 1 pinch red pepper flakes

  11. 1 1/2 cups lettuce -- shredded

  12. 2 tablespoons peanuts

  13. 2 flour tortillas

  14. 1. Combine tomatoes, red pepper, scallions, coriander and 2 tsp lime juice, lim e zest, cumin, chili powder salt and red pepper flakes. 2. Stir in black beans and set aside. 3. Warm tortillas one at a time in a hot skillet. 4. Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts .
