  1. 3 cups (480g) shredded cooked chicken

  2. 1 small (700g) Chinese cabbage, sliced thinly

  3. 2 green onions (green shallots), sliced thinly

  4. 100g Crunchy Combo Sprouts

  5. cup firmly packed fresh coriander leaves

  6. cup (75g) salted cashews

  7. 2 tablespoons toasted pepitas


  9. cup (60ml) soy sauce

  10. 1/3 cup (80ml) rice vinegar

  11. 2 tablespoons peanut oil

  12. 2 teaspoons brown sugar

  13. 1 teaspoon sesame oil

  1. SOY DRESSING: Place all ingredients in a screw-top jar; shake well.

  2. Place chicken, cabbage, onions, sprouts and coriander in a large bowl.

  3. Add Soy Dressing; toss gently to combine. Sprinkle with cashews and pepitas.

  4. Not suitable to freeze.

  5. Cook's Note: Crunchy Combo Sprouts are available from major supermarkets. They are a combination of mung, lentil, pea and bean sprouts.
