  1. 2 TBSP Virgin Coconut Oil, or EVOO

  2. 1 large Onion, chopped

  3. 1 small Jalapeno pepper, seeded and finely chopped

  4. 2 tsp Cumin

  5. 1 TBSP Mexican Seasoning (I mix 1/2 tsp each of onion powder, garlic powder, paprika, red pepper, oregano and cardamom)

  6. 1 1/2 cups Millet, rinsed and drained

  7. 3/4 cup Amaranth, rinsed and drained

  8. 2 tsp Sea Salt

  9. 6 1/2 cups Water

  10. 2 cups fresh organic Corn Kernels, or one 10-oz bag frozen organic Corn

  11. 1 large Red Bell Pepper, diced (I use 2 Carrots when bell peppers are not in season locally)
