  1. 1 cn Chopped artichokes, plus

  2. -liquid

  3. 3 large garden-fresh

  4. -tomatoes, chopped

  5. 5 cloves garlic, crushed

  6. 1 lg Onion, chopped

  7. 2 T Flour, dissolved in 

  8. 1 c cold

  9. -water

  10. -skim milk to taste

  11. -splash balsamic vinegar

  12. -lots of fresh basil,

  13. -chopped (1/2 cup,

  14. -chopped)

  15. -spinach noodles, cooked and -drained

  1. Saute onion in vinegar. Add can of artichokes and liquid. Make sure the pieces are bite-sized.

  2. Add flour and stir while cooking for approxiately 5 minutes. Skim milk can be added to thin mixture.

  3. Add the chopped tomatoes, and basil and cook for another 10-15 minutes.

  4. Serve over spinach noodles.
