  1. 12 ounces mahi mahi fillets

  2. 1/2 cup pineapple chunk

  3. 1/2 cup salsa (preferably fresh)

  4. 1 teaspoon cornstarch

  5. 1 teaspoon horseradish

  6. 1 teaspoon honey mustard

  7. garlic-flavored non-stick spray

  8. 1/4 teaspoon lemon pepper

  1. Chop pineapple into small pieces.

  2. Combine with salsa, cornstarch, horseradish and honey mustard.

  3. Coat both sides of fish with cooking spray.

  4. Sprinkle fish evenly with lemon pepper.

  5. Preheat large saute pan on medium-high.

  6. Cook fish 3 minutes; turn.

  7. Add salsa to one side of the pan & stir often to evenly heat.

  8. Reduce heat to medium, and simmer 5-6 minutes or until flesh is opaque & separates easily with a fork.

  9. Serve fish and sauce over prepared long grain rice.
