  1. Mexican Grilled Corn

  2. Serves 4 4 ears corn

  3. 1/2 cup mayonnaise

  4. 1 1/2 cups sour cream

  5. 1/4 cup freshly grated Parmesan

  6. 1/4 cup freshly chopped cilantro leaves

  7. 1 lime, juiced

  8. Red chili powder, to taste

  9. 2 limes cut into wedges, for garnish

  10. Remove the husks of the corn but leave the core attached at the end

  11. so you have something to hold onto. Grill the corn on a hot grill

  12. or cast iron griddle pan until slightly charred. Turn it so it gets

  13. cooked evenly all over. Mix the mayonnaise and sour cream together.

  14. Mix the Parmesan and cilantro together in another bowl. While the

  15. corn is still warm slather with mayonnaise mix. Squeeze lime juice

  16. over the corn and shower with Parmesan mixture. Season with chili

  17. powder and serve with extra lime wedges.
