  1. TOFU TAMALE

  2. Makes 4 servings.

  3. 1 Tbsp. plus 1 tsp. vegetable oil

  4. 1 cup chopped onions

  5. 2 cup sliced zucchini

  6. 1 cup sliced mushrooms

  7. 12 oz. firm-style tofu, cut into cubes

  8. 3 cup canned crushed tomatoes

  9. 1 Tbsp. chili powder

  10. 1/2 tsp. salt

  11. 1/4 tsp. pepper

  12. 16 pitted black olives, sliced

  13. 1 cup drained canned whole kernel corn

  14. 1 1/2 oz. uncooked yellow or white cornmeal

  15. 4 oz. sharp Cheddar cheese, shredded

  16. In 12 inch skillet that has an oven-safe or removable handle heat

  17. oil over medium-high heat; add onions and saute until translucent.

  18. Add zucchini and mushrooms and saute 5 minutes; add tofu, tomatoes,

  19. chili powder, salt and pepper. Reduce heat and let simmer 15

  20. minutes. Preheat oven to 400 degrees. Stir olives, corn and cornmeal into tofu mixture and cook, stirring frequently, until

  21. mixture thickens, 5-10 minutes. Sprinkle with cheese, transfer to

  22. oven and bake until cheese is melted, about 5 minutes. Let stand 5 minutes before serving.
